Ingredients
- 1 tin of peeled plum tomatoes
- 2 pints of water
- 2 tbsp tomato puree
- 1 onion
- 1 large potato
- 3-4 cloves garlic
- 2 tbsp olive oil
- 2 tbsp of basil
- Salt and pepper
- 1/2 teaspoon red chilli flakes (optional)
Method
- Peel and chop onion and garlic, and fry until onion is soft
- Peel and chop the potato
- Add the water, add the potato and bring to the boil
- Once boiling, add tinned tomato and puree, stir and simmer until potato is cooked
- Add the basil
- Blend the mixture and season
- Serve with fresh bread and enjoy!
